Ingredients
 

  • 3 zucchinis
  • 1 Tablespoon olive oil
  • ¼ teaspoon black pepper
  • 2 tomatoes, diced (or 1-15 ounce can diced tomatoes, drained)
  • ¼ teaspoon garlic powder

Instructions
 

  • Slice zucchinis lengthwise into ½-inch pieces.
  • Cook in a skillet or electric skillet with oil and black pepper until zucchinis begin to brown.
  • Add tomatoes and garlic powder.
  • Cook 10 minutes until heated through.
