Zucchini and Tomatoes
It’s quick and easy to pan fry fresh vegetables for a colorful side dish.

Ingredients
- 3 zucchinis
- 1 Tablespoon olive oil
- ¼ teaspoon black pepper
- 2 tomatoes, diced (or 1-15 ounce can diced tomatoes, drained)
- ¼ teaspoon garlic powder
Instructions
- Slice zucchinis lengthwise into ½-inch pieces.
- Cook in a skillet or electric skillet with oil and black pepper until zucchinis begin to brown.
- Add tomatoes and garlic powder.
- Cook 10 minutes until heated through.
