Seared Greens

Ingredients
- 1 ½ pounds kale or collard greens
- 1-2 Tablespoons canola oil
- 4 garlic cloves, chopped (or 2 teaspoons minced or 1 teaspoon powder)
- 1 cup water
- ¼ teaspoon salt
- 1 teaspoon black pepper
- 2 Tablespoons cider vinegar
Instructions
- Wash greens and cut away stems. Dry leaves.
- Tear leaves into pieces or slice across leaves into ½-inch wide strips.
- Cook garlic in oil in a large skillet or electric skillet over medium-high heat. Add greens and water.
- Cover and steam for 4 minutes.
- Uncover and stir. Add salt and pepper.
- Continue to stir until greens shrink.
- Add vinegar and cover.
- Turn off heat and let stand for 5 minutes 5 minutes. Serve warm.
