Cauliflower Mashed Potatoes

Ingredients
- 3-4 medium potatoes (about 1 pound)
- 1 small head cauliflower
- 1 small onion, diced (or ¼ teaspoon onion powder)
- 1 garlic clove (or ½ teaspoon minced or ¼ teaspoon powder)
- ¾ teaspoon canola oil
- ½ cup low-fat milk
- Salt and black pepper to taste
Instructions
- Wash and peel potatoes. Cut potatoes into cubes. Cut cauliflower into 1 ½ inch pieces.
- Boil potatoes and cauliflower in a large saucepan until tender, about 20 minutes.
- While potatoes and cauliflower are boiling, cook onion and garlic in a small skillet with oil until tender.
- Drain potatoes and cauliflower and place in a deep bowl. Mash with a fork or potato masher until chunky. Add onion and garlic. Continue mashing while adding milk a little at a time. Mash until no longer chunky.
- Season with salt and pepper to taste.
