Coffee Cake

Coffee cake is a great recipe to try on a relaxing weekday morning. This recipe uses Master Mix, an all-purpose baking mix you can make ahead of time and store for use in many of our recipes.

Ingredients
 

Cake

  • 2 cups CNP Master Mix
  • ½ cup sugar
  • 1 egg
  • cup or low-fat milk

Topping

  • cup brown or white sugar
  • 2 Tablespoons CNP Master Mix
  • 1 teaspoon cinnamon
  • 2 Tablespoons margarine

Instructions
 

Cake

  • Preheat oven to 375°F. Spray an 8x8-inch baking pan with nonstick spray.
  • Combine CNP Master Mix and sugar.
  • In a separate bowl, mix the egg and milk together. Stir into dry ingredients until just blended.
  • Pour into the 8x8-inch baking pan.

Topping

  • Combine dry ingredients and cut in margarine with a knife, fork, or fingers until crumbly. Sprinkle over the cake batter.
  • Bake at 375°F for 20 minutes. Cut into 9 pieces once slightly cool.

Notes

Variation
  • Add Fruit- Instead of topping, arrange apple or pear slices on cake batter in a pretty design. Sprinkle with a mixture of 2 Tablespoons sugar and 1 teaspoon cinnamon. Bake as directed.
