Creamy Rice Pudding

Ingredients
- 3 cups cooked brown or white rice
- 3 cups low-fat milk
- ½ cup sugar
- 1 Tablespoon margarine
- 1 teaspoon vanilla
- ¼ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ cup raisins (optional)
Instructions
- In a saucepan, combine rice, milk, sugar, and margarine.
- Cook over medium heat until thickened, about 30 minutes, stirring often.
- Add vanilla, spices, and raisins. Pour into a serving dish.
- Serve hot or cold.
