Creamy Rice Pudding

Ingredients
 

  • 3 cups cooked brown or white rice
  • 3 cups low-fat milk
  • ½ cup sugar
  • 1 Tablespoon margarine
  • 1 teaspoon vanilla
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup raisins (optional)

Instructions
 

  • In a saucepan, combine rice, milk, sugar, and margarine.
  • Cook over medium heat until thickened, about 30 minutes, stirring often. 
  • Add vanilla, spices, and raisins. Pour into a serving dish.
  • Serve hot or cold.
