Ham & Potato Soup
This soup uses CNP Magic Mix, an all-purpose mix that can be made ahead of time, stored easily, and used to make other dishes in the cookbook. Creamy and hearty, this dish is comforting on a cold day.

Ingredients
- 4 cups raw potato (diced)
- ⅓ cup celery (diced)
- ⅓ cup onion (diced)
- ¾ cup ham (chopped)
- 4 cups low sodium chicken broth
- 1 teaspoon black pepper
- ⅔ cup CNP Magic Mix
- 2 cup Water
- ½ cup shredded low-fat cheddar cheese (optional )
Instructions
- Combine potatoes, celery, onion, ham and water in a stockpot. Bring to a boil and cook over medium heat until potatoes are tender, 10-15 minutes.
- Stir in chicken broth and pepper.
- In a sauce pan combine ⅔ cup of Magic Mix and 2 cups of water to make thin white sauce. Stir over medium heat until smooth and thick.
- When sauce just beings to boil, remove from heat. Add cheese to the white sauce and stir until melted.
- Stir the cheese sauce into the stockpot, and cook until heated through.
