Onion Rings

Baking food instead of frying reduces the use of unhealthy saturated fats. Boost flavors with seasoning instead of fat. This recipe uses CNP Magic Mix. Made with dry milk powder, this mix can be made ahead, stored, and used in many of our cookbook recipes.

Ingredients
 

  • 1 large yellow onion
  • 2 cup cornflakes cereal (crushed)
  • 1 ½ cups CNP Magic Mix
  • cup Water
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • Nonstick spray

Instructions
 

  • Preheat oven to 400°F. Coat a baking sheet with nonstick spray.
  • Slice onion into ¼-inch rounds and separate into rings.
  • Spread half the cornflake crumbs on a plate.
  • To make batter, mix CNP Magic Mix, water, and spices in a shallow bowl.
  • In batches, dip onion rings into batter (letting excess drip off) and then coat in cornflake crumbs. Use second half of cornflake crumbs as needed.
  • Place on baking sheets. Bake at 400°F until brown, about 30 minutes. Turn once while baking.
