Peanut Butter Refrigerator Cookies

A few ingredients is all it takes to have these soft peanut buttery cookies fresh at home.

Ingredients
 

  • 2 cups CNP Master Mix
  • ½ cup sugar
  • 1 ¾ cups peanut butter
  • 2 eggs (beaten)
  • ¼ cup low-fat milk
  • 1 teaspoon vanilla

Instructions
 

  • Preheat oven to 375°.
  • Combine CNP Master Mix and sugar.
  • Add remaining ingredients and blend together with a fork.
  • Shape dough into two logs about 1 ½ inches in diameter.
  • Wrap logs in waxed paper and refrigerate overnight or freeze for 30-60 minutes until firm.
  • Cut into ¼-inch thick slices and place on a baking sheet (without cooking spray).
  • Press down on the top of each cookie with a fork.
  • Bake at 375°F for 12-15 minutes.
