Skillet Beef Stroganoff
This dinner favorite uses CNP Magic mix, an all-purpose mix that can be made ahead of time, stored easily, and used to make other dishes in the cookbook.

Ingredients
- 1 pound boneless lean beef or game (sirloin or round)
- ½ cup onion (chopped)
- ½ cup mushrooms chopped (or 1 6-ounce can, drained )
- 2 garlic cloves (or 1 teaspoon minced or 1/2 teaspoon powder)
- ¼ teaspoon salt
- ½ teaspoon black pepper
- ½ cup CNP Magic Mix
- ½ cup low-sodium broth (chicken or beef )
- ½ cup low-fat plain yogurt (or low-fat sour cream)
- 4 cups cooked whole-grain noodles
Instructions
- Cut meat into thin strips.
- In large pan electric skillet, brown meat with onions, mushrooms, garlic salt, and pepper. Remove from skillet and set aside.
- In the same skillet, stir CNP Magic Mix and broth. Bring to a simmer stirring constantly until thickened.
- Turn heat to low. Slowly stir in yogurt or sour cream. When well mixed, add meat mixture and heat through.
- Serve over hot noodles.
