Taco Soup

This soup uses the CNP Meat Sauce, a base mix of meat and spices you can make ahead and use in many recipes for a quick meal.

Ingredients
 

  • 2 cups CNP Meat Sauce
  • 2 teaspoons CNP Mexican Seasoning
  • 1 15-ounce can diced tomatoes
  • 2 cups cooked beans (kidney, pinto, or black beans; or 1 15-oz can, drained)
  • 1 15-ounce can corn (drained)
  • 1 cup water
  • shredded cheese, corn chips, olives, low-fat sour cream (optional toppings)

Instructions
 

  • Combine all ingredients in a saucepan and bring to a boil.
  • Simmer 10 minutes, or longer if meat sauce is frozen. Add more water, if needed.
  • Ladle into bowls and sprinkle with shredded cheese and other toppings, as desired.
