Zesty Lemon Fish
Take a break from red meat and bake your favorite white fish.

Ingredients
- 1 pound white fish fillets (tilapia, cod, etc.)
- 1 small onion (sliced)
- 4 Tablespoons lemon juice
- 1 teaspoon canola oil
- 1 ½ teaspoons lemon pepper or black pepper
- 1 teaspoon dried parsley
- ¼ teaspoon of paprika (optional)
- nonstick spray
Instructions
- Preheat oven to 350°F. Spray a baking sheet (any size) with nonstick spray.
- Separate fish into 4 serving size pieces. Place on baking sheet coated with nonstick spray.
- Top with onion slices.
- Drizzle lemon juice and oil evenly over fish.
- Sprinkle fish with pepper and parsley. Dust with paprika.
- Cover and let stand for 5 minutes.
- Bake at 350°F for 20 minutes or until fish flakes easily with a fork and has an internal temperature of 145°F.
