Basic Vegetable Soup
This SOUPer easy recipe can be made from ingredients in the pantry for a quick dinner.

Ingredients
- 4 ½ cups low-sodium broth (beef, chicken, or vegetable)
- ½ cup onion
- 2 teaspoons CNP Italian Seasoning
- 1 bay leaf
- ¼ teaspoon black pepper
- 1 10-ounce package frozen mixed vegetables (or 2 cups)
- 1 15-ounce can diced tomatoes
Instructions
- Chop the onion.
- In a large saucepan, mix broth, onion, CNP Italian Seasoning, bay leaf, and black pepper. Heat.
- Stir in mixed vegetables, but not tomatoes.
- Bring to a boil. Reduce heat, cover, and simmer for 6-8 minutes or until vegetables are tender crisp. Remove bay leaf and throw away.
- Stir in tomatoes. Heat through.
Notes
Variations
- Add Beans: Add 2 cups cooked kidney beans or 1 15-ounce can with the mixed vegetables.
- Add Meat: Add 1 pound of cooked ground beef, turkey, or pork with the mixed vegetables.
