Rice Pilaf

Ingredients
 

  • ½ cup chopped onion
  • 1 Tablespoon canola oil
  • ½ cup uncooked brown rice
  • 1 ¼ cups chicken broth or bouillon
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder

Instructions
 

  • In a saucepan, cook onions and oil until soft, but not brown.
  • Add rice, broth, pepper, and garlic powder. Heat to boiling. Stir once.
  • Reduce heat, cover, and simmer 45 minutes until rice is tender and liquid is absorbed.
  • Mix lightly and serve hot.

Notes

Variation
  • Make it a Meal: Add 1/2 to 1 cup cooked meat and vegetables after simmering. Mix lightly. Cook covered for 5 minutes more.
