Sweet & Sour Meatballs
Tangy and sweet, the pineapple and soy sauce add flavor to your protein. This recipe can be made from the CNP Baked Meatball recipe or pre-cooked meatballs.

Ingredients
- 1 20-ounce can pineapple chunks (save liquid)
- water
- ¼ cup vinegar
- 1 Tablespoon soy sauce
- ½ cup brown sugar
- 3 Tablespoons corn starch
- 2 green bell peppers (chopped)
- ½ cup onion (chopped)
- 24 CNP Baked Meatballs (or pre-cooked meatballs)
- 3 to 4 cups cooked brown rice
Instructions
- Drain the pineapple, saving the juice. Add water to the juice to make ¾ cup. Pour mixture into pan or electric skillet.
- Add vinegar, soy sauce, brown sugar, and corn starch. Stir until smooth.
- Cook over medium heat until thick, stirring occasionally.
- Add pineapple, green pepper, onion, and meatballs. Simmer until heated through, 15-20 minutes. Use a food thermometer to check that center of meatball reaches 160°F for food safety.
- Serve over brown rice.
