Hello!
It was a relatively short but exciting week for me here at the University of Wyoming. I actually was not here in Laramie for most of the week. Over the weekend, I took a field trip with the Food Science Club to South Dakota and Iowa. We traveled up to visit Mount Rushmore and then stayed in Deadwood. The next morning we were up before the sun to travel to Inwood, Iowa to tour Calico Skies a vineyard and winery. We learned about their venture into the wine industry, how they make their wine, and market it. On Monday, we met up with the University of Wyoming Meat Judging Team in Sioux Falls, SD to take a tour of the John Morrell pork processing plant. This facility slaughters 18,500 hogs per day, 6 days per week! To try to explain to you all that we saw would be a short novel. We got to see them make hams, bacon (they do 225,000 pounds per day), sausages, hot dogs, and many other products. We got home to Laramie very late on Monday night, but it was a great trip and great example of all the opportunities available here at the university.

Tuesday and Wednesday I went to class and worked at the meat lab before taking off for Thanksgiving break. I saw lots of family, ate way too much food, and got to spend some time at home working on the ranch.
